Banana Bread. It’s a Piece of Cake

Every Monday I optimistically pack a banana in to my son’s school lunch box. The banana looks optimistic too, all bright yellow and pristine.

By the end of the week myself, The Bo and said banana will have done several trips to and from the school. The blackened and bruised Banana looks out of the lunch box forlornly, begging me to put it out of its misery.

So this is what I do.

Pre heat the oven to 160 degrees c

Mash up two over ripe bananas until smooth. Cream together 170g caster sugar and 170g unsalted butter. Then add 3 beaten eggs, your mushy banana’s and a few drops of vanilla essence. Once smooth fold in 170g of self-raising flour and chuck the mixture into a lined loaf tin.

Put it in the oven for an hour or until it is cooked through.

And there you have it. A popular lunch box staple for the children, grown ups love it too and my sad little banana gets a new lease of life.

Waste not. Want not!
