Holiday Picnic Cake Part 2

So my tea cake is wrapped and maturing nicely. It is time to make my next picnic cake.

This one is my fail safe cake. It is what I always bring as an offering to family gatherings and it is always very popular. Mr B is always asking me to bake one.

It is a Nigel Slater lemon cake. I found the recipe in the Observer newspaper absolutely years ago and it has been a firm family favourite ever since. I like Slater because there is no faffing about and things are (like me) simple.

The ingredients

200g butter

200g demerara sugar

90g plain flour

90g ground almonds

1/2 tsp baking powder

The zest of a large lemon

4 large eggs beaten

Pre heat your oven to 165 c and line and grease a cake tin.

Beat the butter and sugar together until light and fluffy.

Add your eggs a bit at a time (don’t worry if it starts to look a bit curdled).

Carefully fold in the rest of your dry ingredients and lemon zest and then put the mixture in the cake tin

Bake for at least 45mins. To check if it is cooked poke the centre with a skewer. If it comes out clean then it is ready.

Whilst it is in the oven mix your lemon juice with 2tbs of demerara sugar.

once your cake is baked spike the top of it several times and then spoon over the lemon and sugar.

Leave to cool.
